30 Day Challenge: Day 25, A recipe

Pumpkin Roll

Batter

3 Eggs

2/3 Cup Pumpkin (Can be canned pumpkin)

1 Cup of Sugar

1 tsp Baking Soda

½ tsp Cinamon

½ tsp Ground Cloves

¾ Cup Flour

Filling

1 Cup Powdered Sugar

2 Tbls butter, softened

8 oz. Cream Cheese, Softened

¾ tsp Vanilla


Line a cookie sheet with wax paper, it should go up on all sides. Mix batter ingredients. Pour batter into cookie sheet with wax paper. Spread evenly. Batter is thin. Bake at 350 degrees for 12 – 15 mins. Cool in pan for 5 minutes. Flip onto a cold damp towel that has been heavily sprinkled with powdered sugar. Remove wax paper. Roll up in cold damp towel. Cool for 5 minutes in freezer. Unroll and spread creamed together filling. Roll up tightly. Wrap in plastic wrap. And refrigerate until ready to eat! Freezes well for later enjoyment up to 3 months.

I don't know anyone who doesn't love Pumpkin Roll. It's a staple in my house, at Thanksgiving, and Christmas. There's a common problem that people often have with Pumpkin Roll...when you roll it up, it cracks. Well, this recipe solves that problem. Wrapping it in a cold damp towel and placing it in the freezer for 5 minutes solves this problem. I also made my own change...the 1/2 tsp of Ground Cloves is my addition. I love the smell, and the taste that cloves give to food.

Well, part of it is. The part where you wrap it in a damp towel, covered in powdered sugar, and place it in the fridge is my Mom's addition. At least I think it's her's...she may have heard it from someone else though. Anyways...most of the recipe she got from a cookbook.
